Cassia sticks are the dried bark of the Cassia cinnamon tree (Cinnamomum cassia), a common, bolder, and spicier type of cinnamon widely sold as "cinnamon" in North America and South Africa, used to infuse flavour into hot drinks (tea, mulled wine), curries, stews, desserts, and even for crafts, offering a warm, sweet aroma and strong flavour unlike the more delicate Ceylon cinnamon.
